Halloween Recipe of the Day: Apple Sundaes

Makes 4 servings.
Ingredients:

* 2 Apples
* 4 Tbsp Almond Butter
* ½ pure maple syrup
* 4 Tbsp chopped almond
* 4 tbsp grated coconut (optional)
* Frozen Vanilla Yogurt or Regular Low Fat Vanilla Yogurt.

Directions:

1. Mix together the almond butter and maple syrup until it is the consistence of Carmel sauce. Core the apples and cut into small bite sized chunks.
2. Scoop a serving of frozen or regular yogurt into each of the four bowls.

Halloween Recipe of the Day: Popcorn Balls

Notes/Suggestions: This are nut free, but you can always add the 3 cups of the nut of your liking to this recipe
Ingredients:

* 2 teaspoons of corn oil, plus more for hands
* 12 cups popped popcorn (3/4 cup unpopped)
* 1 cup granulated sugar
* ½ cup brown sugar
* 1 cup light corn syrup
* ½ cup water
* 1 tsp lemon juice
* ½ tsp salt

Set up:

* 1 – 2 cookie sheets lined with wax paper as a drying area
* 1 large bowl greased with the corn oil
* Pop the corn and put it into the greased bowl .

Halloween Recipe of the Day: Deviled Ham

Notes/Suggestions: Around the holidays some of us bake off a holiday ham and then have tons left over. Here is a great way to use it up and the kids can do most of the work.
Ingredients:

* 1 lb of cooked ham cut into1 inch pieces
* 3 Tbsp Dijon Mustard
* 2 Tbsp Dried Mustard
* 2 Tbsp butter, softened
* 2 Tbsp Mayonnaise
* 1 Tbsp Dried Onion or 1 tsp onion powder
* 4 Tbsp Sweet Relish
* Salt and ground black pepper to taste

Halloween Recipe of the Day: Roasted Pumpkin Seeds

After a night of carving pumpkins, wash all the seeds off and drain them well. For every 2 cups of seeds, combine them with about 2 Tbsp of oil and 1 tsp of Sea Salt. Lay the seeds out on a cookie tray lined with parchment paper so that they are in one layer. Bake them in a 350 degree oven for about 15 minutes. Hi Katherine! I love green Thai curry - in fact I love curry! Thanks for the invitation! I love to cook - but never have the time! My Mia is 14 months old - and its challenging to come home everyday to cook something nutritional and fast - your recipies will be a blessing! and now I'll have an excuse to put my few recipies to a test or two......

Hi Katherine. Great to meet you and thanks for "friendship". My husband and I love cooking and eating however we are not to good at following recipes. We get the general idea when trying a recipe but do our own thing. Will have to send you some traditional South African Recipes. Pray tell what is onigiri, chuka soba? We also love green Thai curry and spicey food, but seem a bit deprived as the kids don't eat it and it is too much hassle to cook twice. I am a computer teacher at aprivate school in Durban SA and can you believe it.... this is my first Blog experience. Am learning the ropes before I set up my own Blog to share some teaching ideas. Any tips or Blog advice will be welcome. Kim
